eating > spam sliders

Super easy Sunday dinner.


I took thick slices of spam (1 can made about 6 slices) and grilled ’em. (They’re also delicious pan fried with no extra oil.) Then paired them with a very simple coleslaw for some freshness and crunch – 1 cup of shredded cabbage + 1 tbsp of light mayo + lemon juice for zing + dash of salt. Hawaiian rolls are my go to slider bun because they are the perfect size and are light and fluffy. For this dish they have the added benefit of making it a full on Hawaiian party with the spam.

We also made grilled chicken sliders seasoned with garlic and oregano, a big ol’ salad, and grilled corn. Perfect summery goodness.
